Sourdough Discard
Sourdough discard is a by-product of your sourdough starter, so don’t throw it away! Instead, use it in delicious Sourdough Discard Recipes where it adds moisture and amazing sourdough flavor. I use 100% hydration sourdough discard in discard recipes.
Use older, more tangy discard in savory recipes like Easy Sourdough Discard Bread and younger, fresh discard in sweeter recipes like these Brown Butter Chocolate Chip Cookies.

Helpful Tips for American Flag Sugar Cookie Fruit Pizza
- For an elevated presentation, use a pastry bag and pipe extra frosting for the white stripes.
- If the dough is too sticky, lay a second piece of parchment paper over the crust to press the dough into the pan.
- The type of pan you bake in affects the baking time. The baking time in this recipe is calculated for a dark metal pan. If using a glass or aluminum baking pan, the dough will bake at a slower rate, and you may need to add a few minutes to the baking time.

Tools You’ll Need
- Mixing bowls
- Kitchen scale  – A vital tool for measuring sourdough bread dough ingredients. They’re not expensive and will help ensure accurate, consistent measurements.
- 9×13 baking pan
- Parchment paper
- Electric mixer
- Zester
- Off set spatula
How to Make a Sourdough Fruit Flag Dessert
Prep
Preheat oven to 350°F/177°C.
Line a 9×13 pan with parchment paper.
The Cookie Crust
Cream the butter and sugar in a large bowl with a handheld mixer until light and fluffy, about 2 minutes. To the bowl, add the egg yolks, sourdough discard, and vanilla extract, and mix until incorporated.

In a separate bowl, combine the flour, salt, baking powder, and lemon zest. Add the wet ingredients to the dry ingredients and mix just until a soft dough forms.Â
Scoop the cookie dough into the parchment-lined pan evenly in the pan. Press dough in an even layer. Place the pan into the preheated oven and bake for 25 minutes or until the edges are lightly golden brown.Â
Remove the pan from the oven and place it on a cooling rack. Allow to cool completely before decorating.

Frosting
In a medium bowl, mix the cream cheese with a handheld mixer until smooth. Add the vanilla extract, heavy cream, and powdered sugar. Mix for an additional minute to whip some air into the frosting.Â

Tip: For a smooth cream cheese frosting, whip the cream cheese smooth before adding the liquid ingredients. Also, sift the confectioners’ sugar through a mesh strainer to remove the lumps.
Assemble the Patriotic Fruit Pizza
Wash and dry the fruit. Cut off the green tops and slice strawberries lengthwise.
Spread the cream cheese mixture evenly over the cooled crust with an offset spatula. Add the berries in a flag pattern. Add the blueberries into the top left corner of the cookie. Arrange the strawberries in 4 lines.
Refrigerate until ready to serve. Best if served immediately.

Tip: If serving on a platter, remove the cookie from the pan before adding the fruit. Loosen the cookie crust from the sides of the pan and lift, using the parchment paper as handles, onto the serving platter or large cutting board.
Storage
Cover the fruit cookie with plastic wrap and refrigerate for up to 3 days. The fruit pizza is best the day it’s served. The cookie base holds up well, but over time, the fruit begins to soften and weep into the frosting. This doesn’t affect the flavor, but it isn’t as aesthetic.
Variations of Easy Sugar Cookie Flag Fruit Pizza
- Swap the fresh berries – Use fresh raspberries for the red stripes instead of strawberries.
- Frosting – Use a buttercream frosting.Â
Individual Cookie Option
Make festive cookies instead of one large cookie bar. For individual fruit pizza cookies, scoop 3 oz cookie dough balls and refrigerate for 1 hour, or until they’re cold.
Place on a parchment-lined cookie sheet 3 inches apart and bake at 375°F/190°C for 17 minutes. Remove from the oven and allow the cookies to rest on the cookie sheet for 5 minutes before transferring to a cooling rack. Decorate with frosting and fresh fruit when cool.Â
For an extra festive flair, create cookie stars using a star cookie cutter once the cookies are cool.
FAQs About Sugar Cookie Fruit Pizza
Do I need to refrigerate the fruit pizza?
Yes, the cream cheese frosting should be refrigerated for storage.
Do I have to use a kitchen scale?
While I know it seems like another thing to have, it’s a worthy investment if you plan to bake. They’re not expensive, and measuring by weight is more accurate than volume for dependable baked goods.
Can I long ferment the cookie dough?
Yes, after the cookie dough is mixed, cover the bowl and refrigerate for up to 24 hours. When ready to bake, remove the cookie dough from the fridge and allow it to warm to room temperature before pressing into the baking pan. Bake as directed.
