Most mornings, I reach for a hot cup of freshly brewed coffee over something to eat. I used to make bulletproof coffee with butter and coconut oil for a morning energy boost, but with the springtime flush of eggs, I have recently made the switch to this yummy beverage!
Not only is it a quick and delicious way to begin my day, but I love that egg yolk coffee is made from homegrown products: the eggs from our chickens, and the maple syrup from tapping our trees. It’s a perfect kickstart to the day. Try it and see for yourself!
Why Add Egg Yolk to Coffee?
Eggs are a powerhouse for nutrition. The yolk contains fat-soluble vitamins A, E, K, and D, in addition to iodine, selenium, choline, and B vitamins.
At first glance, egg whites take the spotlight as a source of protein. But gram per gram, the egg yolk actually has more protein. There just happens to be more volume of egg white in each egg, so it’s what people opt for. Personally, given the choice to choose between the two, I’d choose the yolk every time because the nutrition is in the yolk.
What do I do with the egg whites? I place them into a small dish and refrigerate until the next time someone cooks eggs; use within 24 hours. If you don’t cook eggs frequently, you can freeze egg whites to preserve them for later use.

- Egg yolk – Find the best quality eggs you can find. Look for a local farmer who sells chicken eggs, or else look for pasture-raised eggs at your local grocery store. Do the best you can! Raw egg yolk creates a rich egg cream that has a custard-like consistency.
- Cream – I like to skim the cream off the top of our raw milk, but a heavy whipping cream or half and half will do in a pinch!
- Maple syrup – Maple syrup is naturally full of minerals and is the Lockrem sweetener of choice. Feel free to use honey or sugar.
- Coffee – Whether you brew using a French press, drip brew, or shots of espresso, you’ll want to make sure you start with a strong brew of black coffee for the best flavor.

How to Make Egg Yolk Coffee
- Add egg yolk, heavy cream, and maple syrup to your coffee mug.

Can you make this with a whole egg (yolk and white)?
I find the egg whites become stringy in the coffee, so I leave them out.
