This easy burrata bruschetta with prosciutto toast is a delicious appetizer for any summer gathering, perfect as a light lunch or picnic. This rustic appetizer is made with creamy burrata cheese, fresh tomatoes, basil, and prosciutto.

With such simple ingredients be sure to use produce when it’s at its peak in the summer months when gardens are bursting with ripe tomatoes and fresh basil can be picked moments before making. If you don’t grow your own, visiting your local farmer’s markets is the next best thing.

What is Burrata?

Burrata cheese is a delicate Italian creamy cheese that forms fresh mozzarella into a thin pouch with a cream filled with stracciatella cheese, a mixture of fresh shreds of mozzarella mixed with cream. The creamy center has a soft, buttery texture that is slightly sweet from the cream. 

Burrata is best served at room temperature and eaten as fresh as possible. I don’t know of any shops that make it locally in my area, but I can find it at my local grocery store in the artisan cheese section. It comes packed in a liquid to keep it from drying out. Eaten by itself, the cheese seems simple, but it really shines and comes to its fullness when it’s paired with fresh fruit, vegetables, or pizzas.

Ingredients for Easy Burrata Bruschetta and Prosciutto Toast Recipe

  • Bread – A classic bruschetta is made with grilled slices of crusty bread or baguette. My ciabatta bread or sourdough bread would make excellent choices. Using a crust bread will help counterbalance the softness as well as provide a sturdy base for the rest of the ingredients.  
  • Burrata cheese – The highlight of the bread with its creamy, soft center. If you can’t find burrata cheese, use fresh mozzarella cheese, ricotta cheese, or cream cheese. 
  • Tomatoes – I used sweet cherry tomatoes since I have so many in my garden, but you could use grape tomatoes, Roma tomatoes, or your favorite heirloom tomatoes. If you have many varieties available to you, use a variety of tomatoes for a complex flavor profile. 
  • Red onions – Cut into thin slices and then dice. The red onion adds a nice counterbalance to the bread, as well as crunch. Feel free to leave them out if you have picky eaters. 
  • Fresh basil leaves – The peppery flavor of basil sliced into thin ribbons pairs perfectly with all things tomatoes.
  • Garlic cloves – Mince raw garlic cloves for all of the flavor, but without getting too much in one bite.
  • Balsamic vinegar – Adds a tangy flavor to enhance the tomato bruschetta.
  • Olive oil – Using a good quality extra-virgin olive oil means you don’t need as much to taste its flavor. A little goes a long way.
  • Prosciutto – not only does this provide a salty note, but the prosciutto also acts as a barrier between the bruschetta and cheese, keeping the toast from becoming soggy.
  • Black pepper – Use fresh ground black pepper. 
  • Kosher salt – I like the look of the flakes of kosher salt, but use any sea salt or flaky salt you prefer. 

How to Make Easy Burrata Bruschetta and Prosciutto Toast Recipe

Bruschetta:

I like to make the tomato bruschetta mixture first so that it has time to rest and allow the flavors to meld together while we grill the bread. 

Wash and cut the cherry tomatoes in quarters. Mince the garlic cloves finely. Slice the red onion thinly and then dice the slices. Stack the basil leaves on top of one another, roll, and cut into thin ribbons. Combine all of the ingredients in a small bowl and toss with balsamic vinegar and olive oil. Add a sprinkle of salt and black pepper to taste. 

Toast Bread:

Slice the bread into 6 thick slices. 

Place the bread slices in a toaster or oven and toast until golden brown. Gently rub a clove of garlic on one side of the toast.

Assemble:

Cut the prosciutto slices in half and lay two pieces on each slice of toasted bread. 

Break open the ball of burrata cheese and add on top of the prosciutto with as much or as little as you prefer.

Add a spoonful or two of the tomato mixture over the cheese.

Add an extra drizzle of olive oil, balsamic, black pepper, salt, or basil leaves, and enjoy!

FAQs

Can I Grill the Bread?

Grilling the bread adds another layer of flavor and is my preferred method. Preheat the grill until it’s hot and then lay the slices of bread onto the grill. Watch the bread closely and flip once you see that it’s beginning to char. Char the other side and then remove. Use a grill or a cast iron grill on the stove.

Is Burrata Cheese the Same as Mozzarella Cheese?

No, even though a ball of mozzarella looks similar to burrata cheese, there is a difference between the two. Fresh mozzarella is made from water buffalo or cow’s milk and has a firm but elastic shape that will keep its shape when sliced. Burrata is made with a thin layer of mozzarella to act as a pouch filled with creamy stracciatella cheese. 

Can I Make Burrata Bruschetta Prosciutto Bread Ahead of Time?

You can make the tomato bruschetta ahead of time and store it in an airtight container in the refrigerator up to two days in advance. I recommend grilling the bread and assembling it right before serving.

  • 6 slices bread

  • 1 clove garlic minced
  • 1 tbsp red onion thinly sliced and diced
