The Best Chorizo Corn Pizza 

This chorizo pizza is loaded with spicy Mexican chorizo, red onion, corn, pickled jalapenos, and mozzarella cheese. It’s the perfect balance of sweet, salty, and spicy, which makes it the best chorizo pizza you’ll eat!

At our house, pizza night is a regular occurrence, regardless of the season. In the summer, Scott will often grill the pizzas to keep the heat outside while everyone hangs out on the deck. Slowly, the pizzas come off the grill, and we all admire the beauty (and the dough bubbles!) that homemade pizzas offer. In the cooler months, we move inside and use our oven. Someday, we hope to build an outdoor pizza oven. Until then, we continue to build up our collection of pizza recipes in great anticipation!

While I’m always game for cheese or pepperoni pizza, I’m all about unique, gourmet pizzas like my peach and sausage pizza, or my potato pizza. 

This chorizo pizza recipe has the perfect balance of flavors. Sweetness from the corn, a hint of vinegar and spice from the jalapenos, spicy chorizo, crispy crust, and just enough cheese to hold the ingredients together. It’s utterly delightful and loaded with a bit of chorizo in every bite. The best part, there’s no sauce! There’s enough moisture and flavor just from the chorizo. 

The chorizo and fresh toppings elevate this Mexican pizza to the next level. After the first bite, I know you’ll love it as much as my family does!

What Is Chorizo? 

To begin with, it’s delicious! Full of spicy flavor, chorizo sausage is a highly seasoned meat made typically with pork but can also be made with beef or chicken. There are two varieties, Mexican chorizo and Spanish chorizo. The first is made with fresh ground pork and needs to be cooked. The second is typically smoked.  It can be found in the refrigerator section with other processed meats. I was able to find some at my grocery store in the Mexican refrigerated section.

Most of my exposure to chorizo is in breakfast meals with eggs. But then I thought to myself: “could chorizo go on pizza?” I’m happy to say, yes! And it’s fantastic! 

Chorizo Pizza Ingredients

  • Pizza crust – I’ll always recommend homemade pizza dough, like my sourdough pizza dough, for the best tasting pizzas. However, whether you make your own pizza dough or buy some already made at your local grocery store, you’re sure to want to make this pizza again and again. 
  • Chorizo – The chorizo is the star of the pizza and gives it that spicy, uniquely Mexican flavor. 
  • Corn – Corn on pizza adds a sweetness that contrasts well with the chorizo. If it’s in season, I highly recommend using fresh-cut sweet corn from the cob because it’ll have the sweetest flavor. However, this isn’t always an option, and the next best thing is frozen corn since it’s available year-round.
  • Onion – Opt for red onions for their pretty color. If you don’t love the intense flavor of onions, then try adding caramelized onions for a mild, sweeter flavor. 
  • Jalapenos – Pickled jalapenos add a subtle kick of heat and bring a briny vinegar dimension that lifts the heavy flavors of the cheese and sausage. 
  • Cheese – I love mozzarella and queso fresco for their melting capabilities. However, have fun experimenting with your favorite type of cheese! Try fontina, Manchego cheese, or provolone.

How To Make Chorizo Pizza

Prep

Preheat the oven to 500°F/260°C with a pizza stone in the middle of the oven for 30 minutes. If the pizza dough is cold, remove it from the fridge, keep it covered, and allow it to come to room temperature. It’s ready once it’s proofed and full of air. 

Remove the chorizo sausage from the casing and add it to a frying pan. Crumble it with a wooden spoon and cook over medium heat until fully cooked, roughly 8-10 minutes. When the sausage is cooked, transfer it to a bowl and set aside.

Shape the Pizza and Add the Toppings

Place the pizza dough on a piece of parchment paper. Starting in the center, gently push the dough with your fingers and work your way to the edges, spreading the pizza dough into a 12-inch circle. 

If the dough shrinks back when being stretched, allow it to rest for 5-10 minutes before shaping some more. This allows the gluten strands to relax so the dough can be shaped. 

Top the pizza dough evenly with the cooked chorizo along with some of the juices. 

Next, add the mozzarella cheese and the remaining toppings: corn, red onion, and pickled jalapenos.

Bake

Slide the parchment paper onto a pizza peel and slide it onto the preheated pizza stone. 

Bake for 12-15 minutes.

If you want the top to have extra color, broil for an additional 2 – 3 minutes. Be sure to keep an eye on it as it broils so it doesn’t burn. 

The pizza is done when the bottom of the crust is golden brown, and the toppings are melted. 

Store

Store leftover pizza in an airtight container up to 4 days. The crust will soften with time. 

We usually eat leftover pizza, cold from the fridge. However, you can reheat it in the oven. Place the pizza on a baking sheet and bake for 10-15 minutes until the cheese is melted and the crust crisps up.

Tips

  • Spread the pizza in an 8-inch circle if you like a thicker crust. 
  • Pizza dough is my favorite base to add toppings to, but you can substitute flatbreads or naan breads!
  • Swap out different meats in place of chorizo sausage, like fresh sausage or spicy pepperoni.
  • If you don’t have a pizza peel, use a rimless baking sheet to transfer the pizza!
