Raise your hands if you love having easy snacks on hand! Me too! Not only for myself, but definitely when my kids were younger. These healthy cookie dough stuffed dates are the perfect snack made with simple ingredients you can feel good about feeding to those you love. 

Dates have long been a favorite to stuff with various fillings. While the most popular fillings are savory like goat cheese, cream cheese, or peanut butter, it’s a fun option to have a sweet pairing for a change of pace.

What Are Dates?

Dates are the fruit of a palm tree and nature’s gift to us. Although they can be eaten fresh, it’s more common to find them as dried fruit, which lengthens their shelf life.

Dates are exceptionally sweet and full of minerals and vitamins. However, despite their significant level of natural sugar, they are low on the glycemic index and won’t affect blood sugars in the same way refined sugar will. Delicious dates come in many varieties, the two most common being Deglet Noor dates and Medjool dates.

You’ll find dried dates found in most grocery stores in the health food section or with dried fruit and nuts section.

Ingredients

  • Medjool dates – Medjool dates are softer than Deglet Noor dates and my personal favorite. They are soft, slightly sticky, and have caramel notes.
  • Chocolate chips – Use your favorite type of chocolate, but I suggest using dark chocolate to balance the sweetness of the dates and honey.
  • Coconut oil – Helps create a smooth finish to the melted chocolate.

Cookie dough ingredients 

  • Almond flour – Use blanched almond flour to create a texture and even appearance. This is the base of the cookie dough.
  • Butter – Holds the cookie dough ingredients together for a dough-like consistency.
  • Honey – I love the health benefits of adding honey to this sweet treat. It sweetens the cookie dough and acts as a binder. 
  • Chocolate chips – Since the dates are small I like to use mini chocolate chips in the cookie dough. If you don’t have mini chips, you can give regular size chocolate chips a rough chop with a shape knife.
  • Salt – Top each chocolate covered cookie dough stuffed date with flakey finishing salt or a coarse sea salt to bring balance to the sweetness. 
  • Vanilla extract – Flavors the cookie dough.

How To Make Healthy Cookie Dough Stuffed Dates

Cookie Dough 

Add 55 g (3 tbsp) melted unsalted butter, 75 g (3 tbsp) honey, ½ tsp vanilla extract in a medium bowl and stir to combine. Add 100 g (1 cup) blanched almond flour and 55 g (⅓ cup) chocolate chips to the bowl and stir to combine.

Stuff The Dates

Remove the pit from the inside of each date. Cut the side of the date, spread it open, and pull out the pit. Dates are considered a stone fruit so you’ll need to open up each date to remove the stone unless you buy pitted dates.

Stuff each date cavity with 1-2 teaspoons of the cookie dough mixture.

Cover In Chocolate

Melt 150 g (¾ cup) chocolate chips and 1 tsp coconut oil in a double boiler. Place a heat-proof bowl over a medium saucepan filled with 2 inches of water over medium heat. Add the chocolate chips and coconut oil to the bowl and stir with a silicone spatula. As the steam heats the bowl, the chocolate will begin to melt.

Remove the bowl when the chips are halfway melted and continue to stir. The residual heat from the bowl will melt the rest of the chocolate.

Drizzle the chocolate over the stuffed dates. Sprinkle flaky salt over the tops of the chocolate before it hardens.

Store 

Place cookie dough date bites in a sealed container between layers of parchment paper and refrigerate.

Ingredients
  

  • 35-45 Medjool dates
  • flaky sea salt – Use to sprinkle on the top optional, but highly recommended

Cookie dough

  • 100 g almond flour 1 cup
  • 75 g honey 3 tbsp
  • 38 g unsalted butter 3 tbsp, melted
  • 55 g mini chocolate chips ⅓ cup

Chocolate for Drizzling

  • 150 g chocolate chips ¾ cup
