Healthy Cookie Dough Stuffed Dates

Healthy cookie dough stuffed dates are great sweet treats that you can feel good about. Medjool dates are filled with an almond flour cookie dough filling and covered with a drizzle of dark chocolate for healthy sweet snack option.

Equipment

Ingredients
  

  • 35-45 Medjool dates
  • flaky sea salt - Use to sprinkle on the top optional, but highly recommended

Cookie dough

  • 100 g almond flour 1 cup
  • 75 g honey 3 tbsp
  • 38 g unsalted butter 3 tbsp, melted
  • 55 g mini chocolate chips ⅓ cup

Chocolate for Drizzling

  • 150 g chocolate chips ¾ cup
  • 1 tsp coconut oil

Instructions
 

Cookie Dough

  • Add 55 g (3 tbsp) melted unsalted butter, 75 g (3 tbsp) honey, ½ tsp vanilla extract in a medium bowl and stir to combine. Add 100 g (1 cup) blanched almond flour and 55 g (⅓ cup) chocolate chips to the bowl and stir to combine.

Stuff The Dates

  • Remove the pit from the inside of each date. Cut the side of the date, spread it open, and pull out the pit. Dates are considered a stone fruit so you'll need to open up each date to remove the stone unless you buy pitted dates.
  • Stuff each date cavity with 1-2 teaspoons of the cookie dough mixture.

Cover In Chocolate

  • Melt chocolate chips and coconut oil in a double boiler. Place a heat-proof bowl over a medium saucepan filled with 2 inches of water over medium heat. Add the chocolate chips and coconut oil to the bowl and stir with a silicone spatula. As the steam heats the bowl, the chocolate will begin to melt.
    Remove the bowl when the chips are halfway melted and continue to stir. The residual heat from the bowl will melt the rest of the chocolate.
  • Place the dates on a piece of parchment paper and drizzle the chocolate over the stuffed dates. Sprinkle flaky salt over the tops of the chocolate before it hardens.

Store

  • Place cookie dough date bites in a sealed container between layers of parchment paper and refrigerate.
