Don’t let any of that leftover brisket go to waste. Turn your juicy brisket leftovers into mouth-watering beef brisket sandwiches for an easy dinner for family gatherings, the big game day, or busy weeknights.

We are a family that loves leftovers. In fact, I’ll often double a recipe just so we can have leftovers. Using leftovers makes it convenient to have quick lunch options or easy dinners if the week is busy with places to be.

I also like to repurpose leftovers into a completely new dish, especially if the leftover are any type of meat. Smoking brisket is such an investment of time and money, there’s not a chance that we’ll let any of it go to waste. Try making delicious BBQ brisket tacos, brisket mac, or brisket grilled cheese sandwiches with your leftovers.

Leftover barbecue brisket sandwiches are ideal for busy days when you need dinner on the table with minimal effort. It’s quick and easy to assemble and your whole family will want this meal on repeat.

It’s also one of my favorite ways to feed a crowd. Double or triple the recipe and set everything on a buffet table for everyone to assemble themselves. 

Leftover Brisket Sandwich Ingredients

  • Smoked Beef Brisket – You can’t make a brisket sandwich without brisket. Use my perfect pellet grill smoked brisket recipe for the tastiest, most flavorful brisket. 
  • BBQ sauce – Use your favorite barbecue sauce. I love using rhubarb BBQ sauce.
  • Hamburger buns – Use homemade hamburger buns or ones from the grocery store, sesame buns, or brioche buns. So many choices, but use what you love.  
  • Coleslaw – Adds sweetness and crunch.

​Easy Leftover Brisket Sandwich Instructions

Have dinner at the table with just a few simple steps.

First, make your coleslaw and allow it to sit while you prepare the other ingredients.

Remove the leftover brisket from the fridge and place on a cutting board. With a sharp knife, slice the brisket into thin slices, rotate 90 degrees, and slice again. 

Add the chopped beef brisket and bbq sauce to a saucepan over medium heat, stirring to coat the brisket in sauce, and heat until all the brisket is hot. Make sure you have enough for each person. I like to estimate 1/4 -1/3 cup of meat for each sandwich.

While the brisket is heating up, slice the buns in half and place cut side down on a hot cast iron pan to toast. Toast the buns until they’re golden brown, checking often so they don’t burn, and then remove from the heat.

Build your sandwiches. I like to top the bun with beef brisket, crunchy slaw, and top with a bun.

Variations and Substitutions

This is a great starting point for a bbq beef brisket sandwich, but feel free to add your favorite toppings to make it your own. 

  • Top with thinly sliced red onions, caramelized onions, candied jalapenos, or fermented sauerkraut. If you’re feeling extra fancy, top your sandwich with fried onion rings or crumbled bacon.
  • Serve with sandwich pickles or sweet relish. Change the flavors and use spicy pickles, pickled jalapenos or bread and butter pickles.
  • Spread spicy mustard on the buns.
  • Serve on thick slices of white bread with a side of au jus.
  • Turn the brisket sandwich into the ultimate grilled cheese. Top with Monterey jack cheese, American, or pepper jack, and grill until golden brown and the cheese melts into gooey perfection. 
  • Add the chopped brisket to the saucepan with a bit of beef tallow and fry the brisket until it’s crispy and top with melted cheese. 

Serving Suggestions with Leftover Brisket Sandwiches

These beef brisket sandwiches are hearty, but no meal would be complete without some sides. 

Make Ahead, Storage and Reheating Beef Brisket Instructions

Make the coleslaw a day ahead of time and store it in an airtight container. Combine the chopped beef and barbecue sauce and store in an airtight container. Store brisket and coleslaw in the refrigerator until ready to serve. 

Add the beef brisket to a saucepan and heat over medium heat until heated through.

For an easy slow cooker brisket serving option, add the chopped brisket and barbecue sauce to the crock and heat over low for 3 hours.
