Easy Leftover Beef Brisket Sandwich

Rich barbecue brisket is chopped and served on a soft bun, slathered in tangy BBQ sauce, and topped in crunchy coleslaw. Using juicy, slow-cooked beef brisket that's been smoked to perfection, this BBQ brisket sandwich recipe has tons of flavor and is sure to satisfy the heartiest of appetites.

Ingredients
  

  • 1⅓ cup beef brisket chopped
  • cup BBQ sauce
  • 4 burger buns
  • 1 cup coleslaw

Instructions
 

  • First, make your coleslaw and allow it to sit while you prepare the other ingredients.
  • Remove the leftover brisket from the fridge and place on a cutting board. With a sharp knife, slice the brisket into thin slices, rotate 90 degrees, and slice again. 
  • Add the chopped beef brisket and bbq sauce to a saucepan over medium heat, stirring to coat the brisket in sauce, and heat until all the brisket is hot. Make sure you have enough for each person. I like to estimate 1/4 -1/3 cup of meat for each sandwich.
  • While the brisket is heating up, slice the buns in half and place cut side down on a hot cast iron pan to toast. Toast the buns until they're golden brown, checking often so they don't burn, and then remove from the heat.
  • Build your sandwiches. I like to top the bun with beef brisket, crunchy slaw, and top with a bun.

Notes

Top with thinly sliced red onions, caramelized onions, candied jalapenos, or fermented sauerkraut. If you're feeling extra fancy, top your sandwich with fried onion rings or crumbled bacon. Serve with sandwich pickles or sweet relish. Change the flavors and use spicy pickles, pickled jalapenos, or bread and butter pickles.
