Heavenly Hunks Copycat Recipe-Dark Chocolate Oat Bites

Chewy, sweet, and wholesome. This Heavenly Hunks recipe is just like the ones we all love. With a taste and texture similar to oatmeal chocolate cookie dough, but all of the goodness of a chocolate chip granola bar, these make the perfect snack.

Ingredients
  

Dry Ingredients

  • 2 cups oat flour measure and then blend oats
  • 1 cup old-fashioned oats
  • cup shredded coconut flakes sweetened
  • ½ cup almond flour
  • 1 cup dark chocolate chips

Wet Ingredients

  • ½ cup coconut oil
  • ½ cup maple syrup
  • ½ cup almond butter
  • ½ tsp vanilla extract optional

Instructions
 

  • To make oat flour, place 2 cups of oats into a food processor, grind until it's a fine powder, and add to a large bowl.
  • Next, add 1 cup of old-fashioned oats and 2/3 cup of shredded coconut into the food processor and pulse 3-5 times.
  • Add the oatmeal, coconut, and almond flour to the large mixing bowl with the oat flour.
  • Add ½ cup of coconut oil, ½ cup of almond butter, 1 tsp of vanilla extract, and ½ cup of maple syrup to a pan on the stove over medium heat. Stir to incorporate the ingredients and until the coconut oil is completely melted.
  • Pour the wet ingredients over the oat mixture in the bowl, stirring to combine well. Allow the mixture to cool to room temperature before adding chocolate.
  • While the oat mixture is cooling, prep an 8X8 pan by lining it with a piece of parchment paper.
  • Chop 1 cup chocolate chips until the desired size. I chop mine until roughly half the size. Fold the chocolate into the oat mixture.
  • Next, pour the oat mixture into the pan. Press the heavenly hunks into the pan, paying special attention to the corners. Compacting the mixture will help the bars to hold their shape when cut.
  • Place in the refrigerator for 30 minutes. When the bars are firm, use the parchment paper to lift the bars onto a cutting board and cut them into bite-size pieces with a sharp knife.

Toast the oats if you want a nuttier taste. Place oats on an ungreased baking sheet in a 350-degree oven and toast for 8-12 minutes, stirring halfway.
Use peanut butter, sun butter, or cashew butter in place of almond butter. Cashew butter is a great option because of its mild flavor.  
Use other liquid sweeteners instead of maple syrup, such as honey, brown rice syrup, corn syrup, or agave syrup. I prefer to use maple syrup simply because it's an easy resource for us since we tap our maple trees
If you prefer additional sweetness you can add 2 tbsp of brown sugar, cane sugar, or coconut sugar to the pan when melting the coconut oil.
If you decide to use something other than coconut oil, be sure that the fat that turns solid at room temperature, such as palm oil. The fat helps to hold the bars together and you won't get the same results with a liquid oil.
Heavenly hunks are best stored in an airtight container in the refrigerator. Store up to 2 weeks or freeze for 3 months, if they last that long!
