Ingredients
Cowboy Caviar
15.5ozblack beans
15.5ozpinto beans
15.5oz northern beans
15.5oz navy beans
15.5ozgarbanzo beans
1red onion
1jalapeno pepper
1red pepper
1yellow pepper
2garlic cloves
1cucumber
Dressing
½cupapple cider vinegar
⅓cupolive oil
⅓cupsugar
1tspsalt
½tspblack pepper
Instructions
Make the Dressing
Combine the apple cider vinegar, olive oil, salt, black pepper, and sugar in a small saucepan over medium heat. Stir occasionally until the sugar dissolves, then remove from the heat and set aside to cool.
Make the Salad
Drain and rinse the beans, then add them to a large mixing bowl.
Finely mince the garlic, cut the onion, bell peppers, and cucumber into a small dice, then add them to the bowl.
Dress and Toss
Add the dressing to the bowl, and toss with a large spoon to combine.
Store
Refrigerate cowboy caviar in an airtight container for up to 3-4 days.
