Ingredients
  

  • 200 g blanched almond flour 2 cups
  • 113 g honey ⅓ cup
  • 34 g unsalted butter ⅓ cup
  • 1 tsp vanilla extract
  • 90 g mini chocolate chips ½ cup
  • flaky sea salt (I use Maldon sea salt flakes)

Instructions
 

  • Melt 34 g ( ⅓ cup) unsalted butter, 1 tsp vanilla extract, and 113 g (⅓ cup) honey in a large bowl, and stir to combine.
  • Fold 200g (2 cups) almond flour into the wet ingredients, combining thoroughly.
  • Fold in 90 g ( ½ cup) chocolate chips.
  • Using a small cookie scoop, scoop and roll the cookie dough into balls and place them on a parchment lined baking sheet.
  • Sprinkle a flaky sea salt over the tops and refrigerate for 10-15 minutes or until they're firm.

Store

  • Place the cookie dough balls in an airtight container and store them in the refrigerator. If you're not going to enjoy it within 5 days, place the little bites into a freezer-safe bag and freezer for up to 1 month.
